So, on Friday nights I'm pretty much dead to the world. No longer do I deliberate on where to go out, how to do my hair, or if I should pre-game...now I simply ask myself three questions: 1) Is there something to watch on Netflix?, 2) Where's the wine?, and 3) Do I have anything to eat besides half an onion and a shriveled lemon? And yesterday, the answer to this last question was no. So I begrudgingly hauled my ass to the grocery store for dinner supplies and ended up with a random hodgepodge of ingredients that miraculously resulted in the above. I've officially busted out of my roasted sweet potatoes and brussels sprouts rut!
If you're wondering what the eff "zoodles" are, they're simply spiralized zucchinis, which make a pretty kick-ass pasta replacement. To make them, I use The Inspiralizer, which works incredibly well on all sorts of veggies and can make multiple noodle types: spaghetti, linguine, fettuccine, and ribbon. Anyway, onto the very informal recipe!
Pesto Zoodles with Sundried Tomatoes & Chicken Sausage
Serves 2
2 medium zucchinis, ends trimmed
2 mild Italian poultry sausages
1/4 cup sundried tomatoes
4-6 Tbsp basil pesto (try the recipe in this post)
1) Cook sausages in skillet over medium heat until done. Meanwhile, spiralize your zucchinis and set them aside in large bowl. Prepare pesto now if making your own.
2) Transfer sausages to cutting board and slice into rounds. Discard sausage liquid from skillet and return skillet to medium heat, adding zucchini, sundried tomatoes, and pesto. Toss with tongues until zoodles are warm and coated with pesto, 3 to 4 minutes.
3) Divide zoodles and sausage between two plates. Salt and pepper as needed. Enjoy!
