So, I've never paid money for a Starbucks PSL because 1) that shit's expensive, 2) they're more than likely going to contribute to me getting type 2 diabetes, and 3) these uber trendy drinks remind me of UGG boots and Syracuse sorority girl laughter...haunting. Oh, and they're not remotely paleo. So I decided to create my own. I skimmed over some recipes that were already out there, combined the best of all worlds while eliminating unnecessary fluff, and this is the result. Pure, just-sweet-enough deliciousness with a hint of fall.
Pretty Freakin' Awesome Paleo Pumpkin Spice Latte
1 cup brewed coffee
1/4 cup full-fat coconut milk
1/4 cup unsweetened almond milk
1 1/2 Tbsp pumpkin puree
1 Tbsp maple syrup
1/2 tsp pumpkin pie spice
1/2 tsp vanilla extract
Heat all ingredients in a saucepan over medium heat, stirring, until hot. It will begin to simmer and bubble. Pour mixture into a blender and puree until frothy, about 10 seconds. Pour into your favorite mug, and drink that goodness up.
