This super rad "bread" is my secret weapon to not going totally frigin crazy while doing Paleo (sometimes you just need a god damn sandwich, amiright?). As long as you have a food processor, it's pretty simple, containing just few ingredients: cauliflower, almond flour, eggs, and flax seed meal.
Grain-Free Cauliflower Bread
1/2 medium head cauliflower, roughly chopped
1 1/2 cups almond flour
2 eggs
2 Tbsp flax seed meal
1/2 tsp salt and pepper
1 tsp garlic powder (optional)
1) Place roughly chopped cauliflower in food processor and pulse until it reaches a fine rice-like consistency. Transfer it to a large mixing bowl. Add remaining ingredients to bowl and mix until well combined.
2) Line a baking sheet with parchment paper. Grab about 2 tablespoon's worth of "dough" in your hands, form it into a ball, then flatten into sandwich rounds on the parchment-lined baking sheet (mine were about 4" in diameter and I fit about 6 rounds on the pan at once). Bake at 375 F until browned, 20 to 30 minutes.
Boom! Now you have bread. You're welcome.
